British Baking Goals
There are certain recipes that I keep coming back to when it comes to British baking: Millionaire's shortbread, Scottish shortbread, scones, Yorkshire pudding (more cooking, I know), Easter cakes, Christmas cake, Sticky Toffee pudding (steamed of course) and the very occasional Battenberg cake.

But there are other recipes I think about baking a lot, and never seem to get around to: Flapjacks, Brandy snaps, Victoria sponge, Bakewell tart and various types of puddings. For some reason, although my mom definitely made these bakes all throughout my childhood, I can't find any of these recipes in the books she left behind. I'm not sure why she didn't keep them....but alas, I need to find new recipes.

If anyone has a good flapjack recipe or brandy snap recipe, please share if you're willing, as I've had a hard time with these two in particular. I think Victoria sponge, Bakewell tart and the puddings are fairly straight forward - really it's just a matter of making the time to experiment. And I recently received my new steamed pudding bowl from the UK, as my last steamed had lost its tight seal, so I'm ready to go on the pudding front.
